Now, we’re gearing up for an exciting move to Marion, Illinois, right on the historic town square. As part of the vibrant developments happening on the square, we’re thrilled to be bringing our passion for flavor and hospitality to this bustling area.

History

2007-2009
Owners Troy & Katie met in Culinary School at Rend Lake College.
2011
Opened Seasoning Bistro on the square in Benton, IL. At the ages of 26 and 22, Troy & Katie started with $5k and a dream. They worked tirelessly for the next 4 years to build credibility to purchase the building that was in disrepair.
2012
Started a family with our daughter Stella, and a year later, added our son Harvey.
2014
Purchased the building and began renovations. We had to get a new roof, install hvac, exposed original brick walls and original tin ceiling, installed all new lighting, renovated the dining room upstairs to accommodate more seating. Renovated the kitchen with all new equipment. Renovated the back room upstairs to make room for prep, baking and bar… We have run out of space! And we’re getting old and tired of running stairs!
2020
Signed agreement to relocate to the square in Marion, IL. The building itself was in such disrepair that if it wasn’t going to be renovated, it would have to be demolished. The renovation journey began again, but this time on a much larger scale.
2024
Started our new journey in the Art District of Marion. The building was stripped down to studs and completely transformed into our dream restaurant. Every aspect of your experience has been thought through, and we hope that you love the time you spend with us.
